| who knew such a sinful lil' treat could look so cute? |
now and again i don't mind me some delish dunkin' donuts. Having a strong affinity for anything related to Dunkin' Donuts comes with the territory when you grew up most of your life in the New England area. Seriously folks, even if you don't like coffee....you have to be a sucker for their awesome lil' munchkins now and again.
well, i am also guilty of throwing a happy meal or two or three at my children. ::eeeeek:: sometimes this must be done. hungry children = upset children = miserable parents.
enough of that, I follow a foodie blog, Bless This Food, {she's my hubby's sister-in-law, Trina} we attend various "bird-like" functions from time to time. engage in bird time merriment. la la la and yada yada. listen to the men talk about hunting, cars and such. kill.me.now. ::yawn:: anywhooo she always brings the best dishes to family gatherings {sometimes better than mine. gasp!!!}. We usually contact each other well in advance to plan "who brings what".it's a good time and our kids play together and act all adorable and what not. birds will be birds.
well this past week, i noticed she posted a curious lil' post about these delish lil' critters. and i said to myself...."self, i shall make these and they shall go in my belly". way I see it.... if you use low-fat food stuffs, it can't be as bad as the taco bell fanfare..... or this is what i tell myself so i sleep better at night.
1 - 4 or 8 count of burrito sized tortilla wraps ( I made 8 and if you should follow suit, double the ingredients below. Make sure they are BURRITO sized otherwise it won't wrap around your ingredients properly.)
1 lb of 93% lean ground beef
1 package of taco seasoning
1 pint of low fat sour cream
1 container of queso dip ( I used Newman's Own, and it had a little salsa in it)
1 bag of bite sized tortilla chips (I used regular tortilla chips and just smashed em' up so they were "bite sized')
2 cups of shredded lettuce (I did not use lettuce, me no likey)
1 1/2 cups diced tomatoes
4 tblspns of butter (I used "i can't believe it's not butter)
salt and pepper to taste
sour cream, salsa, hot sauce for dipping (optional)
Directions:
1. Brown your beef in a skillet and then add in your taco seasonings as directed on the packet.
2. Remove your beef and place in a bowl next to all of your prepared ingredients. Start a little assembly line as these cook up quick and you want to wrap them up quick one right after the next. Take a new non-stick frying pan and melt about 1 tablespoon of butter in the pan.
3. Now start assembling. Take one of your burritos and place an ample spoonful of ground beef on top.
4. Then add a small spoonful tomatoes on top of the ground beef.
5. Then add a spoonful of sour cream on top of that.
6. Then add a spoonful or two (no one's judging) of the queso cheese. Heat the queso dip in the microwave for about a minute or two so it is warm.
7. Then add a small handful of crushed tortilla chips.
8. Grab the sides of your burrito and fold them into each other kinda like a lil' oragami meat pie. Kind of like an accordion. There is no exact science here. And you should expect to have a slight opening on the top.
9. Gently place the crunchwrap face down in your hot buttered pan. Fry with the crunchwrap face down for about 1-3 minutes. Depending on how hot your range gets. I placed my electric range on medium heat at about five and I found that about a minute and a half worked just fine for each side. Do not flip this too soon, because it will fall apart. Just keep a close eye and flip up ever so slightly with the edge of your spatula to do a "quick check". When that side is done, do the same for the next side and then for the remaining crunchwraps.
10. Serve up hot and with sides if you prefer. enjoy!

An Affair from the Heart
great! hope they go great for you! i'm sure they will! love your foodie page! ciao ~b
ReplyDeleteHave you tried doing this using a tostada instead of broken chips? It's what they use inside of the Cruchwraps. I also like to use a tostada versus a crunchy corn tortilla for my homemade Double Decker, but I break them in half and separate the halves on my soft flour tortilla - somehow I just like the way that works out better. I wonder if I can find a copycat recipe for their nacho cheese? I know one copycat tip for making ground beef the same is using a little bit of flour to thicken it up.
ReplyDeleteMy mouth is watering! I love Mexican food so much. This looks great :)
ReplyDeleteHey Brandi, thanks for the tip! I just followed the recipe but that's a good idea. i never eat taco bell but this treat looked delish, therefore i never really knew how to make it the most authentic. BUT any suggestions to make this better is very much appreciated because my family loved these. :) thanks so much and any tips you can send my way are much appreciated.
