Oh hi! i know. i know. it's been over a week since my last post. i totally suck. actually my house was plagued with a dreadful stomach bug and I have been busy lawyering. ::sigh::
tis' life I guess. Well these muffins are delish. I made them to complement my broccoli cheese soup this past Tuesday night. Sooo good. My kids loved em' too. super easy. done in minutes. filling and hearty.
I find that most "cheese muffin" recipes call for corn meal. Which I'm not a huge fan of, so I found this recipe at Yummly.com and no corn meal. done. way yummier. (I did modify some of the ingredients, not much though.)
PS. do NOT touch your eyes after chopping your peppers. unless you enjoy macing yourself in the eye.
2 cups flour
1 tblspn baking powder
1/2 tspn baking soda
1 tblspn white sugar
1/2 tsp salt
2 cups cheddar cheese grated
1 cup sour cream
2 cloves minced garlic
1/4 cup of melted butter
6 tblspns finely chopped jalapeno peppers (fresh)
2 teaspoons garlic salt (I used Adobo)
1. Preheat your oven to 400 degrees. Mix together your flour, baking soda, baking powder, salt, garlic salt and white sugar in a medium bowl.
2. In a separate bowl add together your sour cream, minced garlic, melted butter, eggs, jalapeno peppers and cheese. Whisk together until creamy and then add to your dry ingredients.
3. Spoon batter into lined muffin cups and then bake at 400 degrees for 15-20 minutes.
